Chicken with Georgia Blueberry Relish
- 2 boneless skinless chicken breasts
- 1 cup Georgia blueberries
- ½ cup sugar
- ½ cup water
- Olive oil
Butterfly the chicken breasts in order to help them cook quicker. Add a little bit of olive oil to coat the frying pan. Add chicken and allow to brown on one side, then flipping and browning on the other. Do this until the chicken is thoroughly cooked.
Add the Georgia blueberries, sugar, and water to a saucepan; bring to a boil. Lower the temperature to medium heat and continue cooking until the blueberries have a thick, relish-like consistency.
Serve the warm blueberry relish over the chicken.
- 1 package Georgia blueberries
- 2 cups all-purpose flour
- 1 tbsp. baking powder
- ½ tsp salt
- 2 large eggs
- ¾ cup sugar
- 1 cup milk
- 4 tbsp. unsalted butter, melted
- 1 tsp vanilla extract
- Preheat oven to 375 degrees. Lightly grease a muffin pan with 12 cups or line with paper liners. Gently toss blueberries with 1 tbsp. of flour; set aside.
- Whisk flour, baking powder, and salt together in a medium bowl. In a separate large bowl, whisk together eggs, sugar, milk, butter, and vanilla.
- Pour the dry ingredients over the wet mixture and mix until combined. Do not overdo mixing or the muffins will be tough.
- Gently fold in the blueberries, careful not to break them open.
- Divide batter among the 12 cups. Bake for about 25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
Blueberry, Kale, and Pineapple Smoothie
- ¼ cup mint leaves
- 1 ¼ cups frozen pineapple
- 1 ½ cups orange juice
- 1 package George blueberries
- 1 cup curly kale
Throw all of the ingredients into the blender, except for the pineapple. Blast it on high for about 60 seconds or until smooth. Add the pineapple and blast for about 20 seconds until smooth.
